Sticky Toffee Pudding
Had a few requests for this over the last month, so here it is for you all.Share the love Baby!!!
STICKY TOFFEE PUDDING
12 oz. pitted dates
1 pt. water. Simmer for 5 minutes, and while this is going on...
Cream 4 ounces butter with 12 ounces castor sugar
Add 4 whole eggs
add 12 oz. self raising flour
Take the dates off the heat, add 2 teaspoons of baking soda..
.then add the resulting foaming mess to the rest of the above mixture and mix. (This is best done in a food processor, but if you're doing this by hand, chop the dates small before you simmer them.)
Pour mix into an 11 inch spring form pan which is lined with paper.
Cook for 40 - 50 minutes at 375 F.
BUTTERSCOTCH SAUCE
Melt over low heat...
8 ounces castor sugar
8 ounces butter
12 ounces soft dark brown sugar
10 ounces golden syrup
pinch of salt
When all smooth and disolved, finish with 12 fl oz Double Cream.Pour some of this sauce over the Sticky Toffee Pudding when it comes out of the oven.
